From reading the nightgaunt logs that I have, I've got quite a few ideas about how they work... (Usual disclaimer: this is all pure conjecture.)

One of them...

In all the posted logs, we've seen that the nightgaunt will return the player after the player dies. Now, something to mull over... what's different about people right after they die that might cause the nightgaunt to carry them off? And no, I don't mean that they're ghosts.
