Any Erol Flinn movie
Any Robin Hood movie (Including Costner's)
Various Mel Brooks films
Bram Stoker's Dracula
The Hobbit and Lord of the Rings
Planet of the Apes
Three Musketeers
The Mask of Zorro

This list is by no means exhausted... But my mind is. Anyway, some of the movies I listed have no, or very little, medieval aspects to them, but they may give you some very cool ideas for characters.
