With a long weapon like a spear, you'd risk the possibility of snapping it off if you're trying to go through flesh and bone. I'd picture impale as going through the soft, fleshy gut.

And as far as killing with one hit, well, merely swinging my sword at someone could kill them, so why not have a chance for instant kill with everything?
