The Iliad, the Odyssey, The Aeneid, L'Morte D'Arthur, Lord of the Rings (if for no other reason that it is fantasy 'Literature'), August Derleth's take on the Cthulhu Mythos (great for evil mages...same for Lovecraft), Song of Roland, Beowulf, Epic of Gilgamesh, And Quiet Flows the Don (russian cossock life - those guys are badasses), the Art of War, Faust.

Plus, for pure character inspiration, the existentialists are always a good choice:

Dostoyevsky's Notes from the Underground
Kafka's The Trial
Camus's The Stranger
and so on.
